i know that raw milk has more nutrition than any pasteurized millk but what do u think abt lowpasteurized milk (like 60 celsius for 25-30 minutes) because i dont know if my farmer's cows are super healthy like it may or may not contain any bad bacteria like salmonella and etc but with lowpasteurized milk i can be 99% sure that its safe to drink. I dont really think that there is too much difference. And im not lactose intolerant. Just wanna know what u guys think

raw milk is a complex colloidal suspension, the main argument against this shit is that it preserves native immunoglobulins and enzymes.

the thing is, most of those proteins (lactoferriin, immunoglobulins) are designed to survive the calf's abomasum not the human stomach. in humans digestion, gastric pepsin and low pH (2 pH) denature them before they can offer ANYTHING

what you are actually preserving with 60°C method is the micellar structure of casein

casein micelles are held tg by CCP (colloidal calcium phosphate). ultra high temp. (UHT) pasteurization uses temp >135°C, the high heat forces the whey proteins like beta lactoglobulin to denature and form disulphide bonds with the kappa casein on micelle surface. this alters the surface chemistry which changes how the milk coagulates in ur stomach

the aforementioned method operates below denaturation threshold for most whey proteins. youre applying just enough kinetic energy to disrupt the lipid bilayer of pathogenic microorganisms like salmonella without causing the covalent restructuring of milk protein

Raw milk has no inherent benefit to it except if digesting milk is hard for you and raw a2 milk is the only one that’s easier on your gut. External Bacteria will not cultivate in your gut microbiome to give it a probiotic effect simply because your stomach acid already eliminates most of them and the rest of your microbiome jist overpowers and swallow the live culture that you added. The enzymes are also destroyed in digestion,no necessary enzymes mostly except lactoferrin which has been shown to pass through and bring some benefits.

You might have 20% more nutrients with raw milk,especially water soluble one,but that dosen’t mean pasteurized milk is completely devoid from nutrients as it’s almost exactly as beneficiary if you consume pasteurized milk anyways. You’re just losing some small amount of nurtients,I like how Dexter Dexter prefers low heat pasteurization.

tbh i'd recommend getting the raw milk, it's probably fine and there is a pretty big difference between raw and low temp pasteurized in my experience

yeah im drinking like 800ml of lowpasteurized milk everyday
